Here is my meal plan for this week!  You can download and print my meal plan here, or you can view my meals in a list format below.

This week my breakfasts and lunches are all things that are leftovers from last week or were already in my freezer.  It’s nice to have a week like this once in a while.  The whole point of making things ahead of time is that you don’t have to spend TONS of time in the kitchen EVERY week!   😀    

As usual, I’m having things that I haven’t posted recipes for yet.  I promise to update my plans with recipes when they are done.  It takes a long time to write about and photograph everything.  I love it, but it’s time consuming.  Please be patient with me.   😉   I’d love to hear what you did to plan ahead for your meals this week!

Snack: (8am)

Breakfast:  (9:30-10:30 depending on hunger level)
Breakfast Sandwich with tomatoes & blackberries
Pumpkin Pie Refrigerator Oatmeal with Pecans & Raisins
Cranberry Almond Oatmeal Packet
Cranberry Orange Pecan Oatmeal Packet
Omelet or Smoothie Pancakes (weekend only)

The breakfast sandwiches and refrigerator oatmeals were made in advance and frozen.
The oatmeal packets were made in advance, with some kept at home and some kept at work.   

Lunch:   (12:30pm)   There is lots of variety this week, since I’m eating leftovers and freezer items!

Sloppy Slaw Casserole with Veggies
This is leftover from last week.

Four Cheese Lasagna “Cupcakes” with side salad  
The lasagna was in freezer.  The side salad was made in advance and stored in a small mason jar.

Mexican Meatloaf with corn muffin & side salad
The mexican meatloaf & corn muffins were in the freezer.  The side salad was made in advance and stored in a small mason jar.

Apple Butternut Pork Chop foil pack
This will be made the night before and reheated for lunch.

Meatloaf with broccoli and couscous
The meatloaf  and broccoli were in the freezer.  The couscous will be left over from dinner the night before.

Tropical Green Smoothie
The smoothie will be made just before I eat it.

Snack:  (4:30pm)
Apple & String Cheese 

Dinner:  (6pm)

Grilled Cheese with Caesar salads
This meal will be made just before we eat it.  I would have prepped the salads in advance but I ran out of time!

Chicken Enchiladas
This is in the freezer from last week’s dinner.

Chicken Stir Fry
This is made from my meal kit that was already in the freezer.

Bacon Ranch Chicken with Swiss; served with couscous
This meal will be made just before we eat it.  In the future I plan to make some couscous ahead and freeze it.

Zucchini Pizza
This will be made just before I eat it.

Four Cheese Lasagna “Cupcakes”
These will be made on Sunday just before we eat, and I will freeze the leftovers for lunches at a later date.

As I’ve mentioned before, my husband and I do not always eat the same thing. On my downloadable meal plan, you can see my dinners along with his.  This might be helpful if you also have family members who do not enjoy the same things!

Snack: Grapes, Hot Tea, Fiber One Coffee Cake, WW Mini Bar, Popcorn, Special K Chips, etc…
The evening snack varies quite a bit depending on how many points I have left, how busy I am, and what I’m in the mood for.  This is also the most dangerous time of day for me, so I have to be careful not to over do it.

This week is going to be hectic, but having the plan made my shopping trip much easier.  It also makes it easy for me to see what is done and what can still be done in advance.  I know what I need to thaw out the night before and what to pack when I leave for work.  It REALLY makes life easier to have this all mapped out!

    For anyone who thinks meal planning is too rigid, I want to share that I totally didn’t stick to everything in my plan this week.

    I had a crazy week at work and I was tired! We ate out Thursday and then I ordered lunch out on Friday with the office. I NEVER do that, but they were getting Panera and I’m obsessed with the Autumn Squash soup, so I couldn’t pass it up.

    The point is that having a plan allowed me to look at what was coming up the next day and tweak things as needed. I didn’t even eat my planned breakfast this morning but since I had homemade oatmeal packets made up (post to come soon), it was no problem to switch things around.

    It is easier to switch around a plan than to come up with something completely new when you are tired and hungry. I do NOT make the best decisions in those situations!
