I just had a great tasting and SUPER filling low calorie sausage & cheddar omelet! I know we can always use new ideas so I thought I’d share it with you. I forgot to take a picture…epic fail. You’ll just have to make it yourself to see how beautiful it is. 🙂
Sausage & Cheddar Omelet with Veggies:
1 large egg
1/2 cup egg beaters original
2/3 cup Jimmy Dean Turkey sausage crumbles
1/4 cup Kraft fat free shredded cheddar cheese
Yellow and green bell peppers, chopped and sauteed
Shiitake sliced mushrooms (from a can), sauteed

I sauteed the peppers and mushrooms in some cooking spray first. While those were cooking, I mixed the egg with the egg beaters. Once the veggies were done, I poured my egg mixture in the pan over the veggies and they cooked right into the omelet!
Once it was ready, I flipped the whole thing over and added the sausage and cheese to the top. I let it sit for a couple minutes to make sure the other side of the omelet was cooked and then I folded it in half. I waited another minute or so to make sure the sausage and cheese were warm and then served it up! I am so full now that I think I could have stopped with half! At least I know I won’t be hungry while grocery shopping!
I love experimenting with new ways to make an omelet. I only do it on the weekends (hate getting up early), but it’s such a filling, protein packed breakfast that you can’t beat it! I’ll post some of my other creations in the future. What low calorie/low point breakfast is your favorite? Share it with us! It may seem basic to you but we may never have thought of it!
