Ranch Tuna Salad

When you need a quick and easy no-cook meal, this ranch tuna salad does the trick!

Normally I use chopped celery or green peppers in tuna salad, but I didn’t have any.  I did have a bag of broccoli slaw, so…why not?  It has the same crunch and the added visual appeal of multiple colors.

As I was grabbing for my tuna, I realized I had several flavors.  Since I felt like having the ranch tuna, I decided to try using ranch dressing (yogurt based) instead of mayo.  It was a total experiment, and it was delicious!

This was ready in minutes.  I started with about 1 cup of broccoli slaw, which is just a combination of shredded broccoli stalks, shredded carrots, and shredded red cabbage.

I then added 1 small pouch (2.6 oz) of ranch flavored tuna and 4 Tablespoons of Bolthouse Farms yogurt ranch dressing and mixed it all together.

That’s it! Now it’s ready to serve on your favorite bread or cracker!  I was planning to eat it as a sandwich on a Flatout Fold-It, but it was bigger than I anticipated!

I didn’t think about how much the serving would be bulked up by adding the broccoli slaw.  There was no way to fold this in half to have a typical sandwich, so I decided to have any open faced tuna salad melt!

You could easily split the tuna salad into 2 servings and be satisfied.  I was pretty stuffed after eating all of this.   😉

Ingredients
  • 1 pouch Starkist Ranch Tuna (2.6 oz)
  • 4 Tbsp Bolthouse Farms Ranch Dressing
  • 1 cup broccoli slaw
Instructions
  1. Combine all ingredients.
  2. Mix well.
  3. Serve on your favorite bread or crackers.

      Yes, it does keep me from getting bored. You know there was a time that I never would have done that! I’ve come a long way!
