Does this look fantastic or what?!  And it was SO quick and easy and was only 4 Points on the Points Plus plan!

My secret on this one is that my veggies were already cut up and waiting in the fridge in a MICROWAVEABLE steam bag.  I didn’t have the excuse of not having time to cut them up or not wanting to mess with a pot on the stove or an actual steamer contraption.  I removed the barriers.  I wanted fresh veggies and there they were!  As for the ham, I bought a pre-cooked turkey ham from Aldi for around $4.  It was half of a ham, and provided a lot of meat!  I sliced it after I bought it and then stored it in a plastic container in the fridge.  All I had to do was cut it into bite size pieces and re-heat it in the microwave.  The prep time on this was about 5 minutes of microwave cooking.  Who says “fast” food has to be bad for you?  This was FAST, and it was healthy, and delicious.

It really can be done.  It just takes a little planning and preparation.  Sure, it’s a little more work on grocery day.  However, if I don’t get things cut up and ready to go when I buy them, they end up going to waste.  When I get home from work or the gym and I’m SUPER hungry, I am SO not going to take the time to cut up fresh vegetables.  I’ll opt for a less healthy choice or settle for canned (yuck!) vegetables.  I just KNOW that prep work needs to be done before I get hungry or it just isn’t going to happen!

TRUST ME – the extra work up front is totally worth it because it makes meal times much easier and less stressful.  It also makes it easier to make the smarter choice!  Why wouldn’t you do it?
