When you need a quick and easy no-cook meal, this ranch tuna salad does the trick! Normally I use chopped celery or green peppers in tuna salad, but I didn’t have any.  I did have a bag of broccoli slaw, so…why not?  It has the same crunch and the added visual appeal of multiple colors.

Italian Pasta Mason Jar Salad

After following a couple recipes last week, I decided to create my own mason jar salad that combined some of my favorite ingredients.  I followed the recommendations for layering, and these turned out great! First Mason Jar Salads!

I made my first Mason Jar salads earlier this week.  I was nervous about them staying fresh, but it worked great!  The lettuce was just as fresh on day 5 as it was on day 1.  A few pieces at the bottom of the lettuce layer were a little wilted from being against the chicken, but it was still totally edible.
